Sometimes, you can’t beat the classics.
You guys all know how I like to mix things up at lunchtime. Packing a basic sandwich every day gets old, so I like to include up a variety of different foods in my lunchboxes, like salads, kabobs, muffin pizzas, and low-carb lunches.
But there are also those days when what you really crave at lunchtime is a classic like the good old-fashioned egg salad sandwich. Nothing fancy, just a simple, satisfying mixture of chopped hard-boiled eggs and mayo, served up on your favorite bread.
And a simple lunch like this doesn’t have to be boring. You can add some interest with a mix of different sides that provide a nice blend of flavors and textures. Like crunchy baby carrots with tangy ranch dip…trail mix, with its mixture of hard nuts, chewy dried fruit, and sweet bits of chocolate…and a sweet, juicy clementine for dessert.
With such a variety of taste and texture in your lunchbox, even a classic lunch like egg salad feels new and exciting.
Mini Egg Salad Sandwich Lunchbox Idea
- 8 slices bread
- 2 cups egg salad
- 4 T ranch
- 12 oz baby carrots
- 1 cup trail mix
- 4 cuties oranges
- Prepare your favorite egg salad in a mixing bowl. I love this egg salad recipe.
- Divide ingredients between your 4 lunchboxes.
- Cover and refrigerate until ready to use. Use within 2 days. If you wait longer the bread might become soggy. So if you would like to add a day or too more, wait to make the mini sammies until you are ready to use.
