A salad you can get your teeth into.
I’m going to guess that a lot of you, when you saw “salad” in the title of this post, thought, “Oh, great.” Because a salad for lunch just doesn’t sound like enough to fill you up, right?
But there are salads and salads. The kind you were probably picturing was a side salad – a light mixture of greens, other veggies, or fruits that goes along with a more substantial main course. It’s a good way to get your healthy veggies in, but it’s not the center of the meal.
This is most definitely not that kind of salad. This Cobb salad is a substantial salad, loaded up with protein and fats as well as healthy veggies. It’s got creamy avocado, hard-boiled egg, crunchy bacon, and cherry tomatoes, all piled onto a bed of chopped greens.
These Easy Lunchbox Cobb Salads won’t leave you hungry. With grapes and almonds on the side to round out the meal, it’s got plenty of power to keep you chugging along all afternoon.
