- This stew was made in a 6-quart Crockpot, but you could make it in a larger pot.

- Easily double this stew if you have a large enough Crockpot and store half for a meal later in the week or to serve a larger crowd.

This stew can be stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop or microwave.

- Cover with the lid and cook on high for 3-4 hours or low for 6-8 hours, until the vegetables are soft and cooked through.

- 14 oz can Rotel undrained
- 10 oz bag frozen mixed vegetables green beans, carrots, peas and corn
- 2 cups beef broth
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 2 teaspoons freshly chopped parsley for garnish
