Perk up your lunchtime, Mexican style.
Holà, everyone! I’ve got a new lunchbox idea for you today – this time, a Mexican-themed one.
The core of this lunch is burritos, which are kind of the perfect food for eating on the go. You’ve got your meat and/or beans all neatly wrapped up in a tortilla, so everything’s perfectly contained and ready to eat. You don’t even need utensils – just grab it and take a bite.
So, in the biggest section of your EasyLunchBox (affiliate link) tuck in one of your favorite ready-made burritos. Choose beef, bean, chicken, or whatever kind appeals to your taste buds. (Two or three of my Easy Homemade Chicken Taquitos would also work.) Add a little cup of salsa on the side, and a handful of cheese cubes.
Then fill in the rest of the box with little snacks that will complement your burrito of choice. I went for sliced strawberries and Cheese-It crackers, but you can choose other kinds if that’s what you happen to like. With this Mexican treat in your lunchbox, lunchtime turns into el almuerzo time!

- 4 of your favorite burritos
- 8 Tbsp salsa
- 4 oz cheese cubes
- 12 strawberries
- 1 cup cheese-its
- Prepare you burritos with your favorite stuffings. We usually love refried beans and cheese!
- Divide ingredients between your 4 lunchboxes.
- Cover and refrigerate until ready to use. Use within 2-3 days.
